Easy Vegan Banana Bread

I love banana bread but it is pretty damn bad for you. It’s also not vegan. It also has a ton of sugar. SO I modified some recipes and came up with the following… an easy, vegan, healthier version of banana bread. ENJOY!

*pro tip- my bananas weren’t ripe so I baked them for 15 minutes on 300 and they were just as good

Ingredients:

  • 4 bananas
  • 1/4 cup coconut oil
  • 1/4 cup plant milk
  • 1/2 cup brown sugar (I used 1/4 coconut sugar and 1/4 monkfruit brown sugar)
  • 2 tsp vanilla
  • 1 cup wheat flour
  • 1 cup almond flour (or any flour of your choice)
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • walnuts for topping

Instructions:

– preheat oven to 350

– mix mashed bananas, sugar, oil, milk and vanilla

– slowly mix in dry ingredients

– pour into loaf  pan and bake for ~45 minutes
