This are my favorite recipe I have made thus far. I normally overeat when I make desserts (something I am working on) and true to character, I absolutely did so when I made these. But I didn’t feel sick and I didn’t feel guilty- seriously, they are THAT good. They taste like a macaroon in that they have the crumbly- coconut flakey texture but also give the impression of a chocolate chip cookie. And they are so light that they won’t leave you feeling gross when you inevitably eat the whole batch 🙂 YAY CLEAN EATS
I was inspired by a recipe from The Big Man’s World but modified it based on what I had on hand and the result was AMAZING. Part cookie, part crumbly macaroon- all absolutely delicious.
- 2-3 dates (adjust for desired sweetness)
- 1/3 cup agave syrup
- 1/3 cup coconut flour
- 1 cup unsweetened coconut shreds
- splash of plant milk (about 1/4 cup)
- chocolate chips to taste
- Put it all in a food processor !
- roll into balls
**they’re not quite like cookie dough in that they’re crumbly and thus a little weird to roll so I ended up kinda molding them into cookie shapes rather than rolling
